GRILLED TERIYAKI GLAZED SAUSAGE AND PINEAPPLE SKEWERS

INGREDIENTS

4 Everything Legendary Sausages (optional: remove casings)
½ whole fresh pineapple
2 red bell peppers
2 green bell peppers
1 cup of your favorite plant-based teriyaki sauce
4 metal skewers

INSTRUCTIONS
  1. Cut sausage, pineapple, red and green peppers into 16 one-inch pieces each.
  2. Thread metal skewers evenly- one piece red pepper, then sausage, green pepper, pineapple, etc.
  3. Brush skewers with teriyaki sauce.
  4. Place skewers on a hot grill, rotating occasionally until sausage is heated through, the vegetables are softened and there are some slight grill marks.
  5. Brush teriyaki glaze over skewers and grill 2-3 minutes longer. Watch closely, teriyaki sauce/glaze can burn easily.

Chef’s Tips

  • Add red or yellow onion
  • Use mango, papaya, or guava in place of fresh pineapple, or If you are watching your sugar intake, skip the fruit and use more vegetables.
  • Garnish with fresh chopped parsley and or white sesame seeds and fresh squeezed lime juice.
  • Removing the sausage casings is optional – the casings are edible and vegan-friendly – we recommended removing them so you can get a better char on the sausage when it’s grilled.
