GRILLED ROMAINE WITH ASIAN FLAVORED PLANT-BASED BEEF

Everything Legendary Ground, carrots, and bell peppers are tossed in a sweet & savory sauce then spooned over grilled romaine halves in this Asian-inspired showstopper of a salad. One bite and you’ll taste why this is one of Duane and Danita’s favorites.

INGREDIENTS

1 package of Everything Legendary Ground
1 ½ teaspoons minced garlic
½ teaspoon peeled and minced fresh ginger
1 tablespoon sesame oil
1/3 cup loosely packed brown sugar
1/3 cup low sodium soy sauce
1 teaspoon cornstarch
¼ cup thinly sliced green onions
2 medium carrots julienned
1 red bell pepper julienned
2 heads of romaine lettuce
1 tablespoon white sesame seeds plus more for garnish

INSTRUCTIONS
  1. Place a large pan on a hot grill. Add ground and cook, breaking up with a spatula, until browned and loose. Add a tablespoon of sesame oil if the ground seems dry.
  2. Add the garlic and ginger to the pan and cook for 1 more minute.
  3. In a small bowl, whisk together the sesame oil, brown sugar, and soy sauce.
  4. Pour the sauce over the grounds and bring to a simmer. Cook for 3-4 minutes.
  5. Mix cornstarch with 1 tablespoon of cold water. Add it to the ground mixture and cook for 1 minute or until the sauce has thickened.
  6. Stir in the green onions, carrots, peppers, and sesame seeds. Set aside.
  7. Cut romaine in half lengthwise, brush with sesame oil, and sprinkle with salt and pepper.
  8. Place romaine cut side down on a hot grill for 1-2 minutes, flip and repeat.
  9. Place grilled romaine lettuce cut side up on plate, spoon grounds over top and serve warm.
  10. Use additional green onions and sesame seeds for garnish.

Chef’s Tips

  • Since the ground is plant-based, and does not contain added fat,  you may need to add additional sesame oil to keep it from getting too dry.
  • Top salads with a spicy mixture of 2 tablespoons of Sriracha and 1 cup of your favorite plant-based mayonnaise combined.
