GRILLED SAUSAGE AND VEGETABLE MEDLEY

It doesn’t get any easier than this – throw your favorite summer vegetables and seasonings in a foil packet, top with our Everything Legendary Crazy Classic Plant-based Sausage (or the Torchin’ Plant-based Sausage if you’re feeling spicy) and toss it on the grill. Enjoy a cold beverage, play some tunes, and 20 minutes later, dinner is served.

INGREDIENTS

4 Everything Legendary Sausages (optional: remove casings)
1 medium zucchini, cut into 1-inch slices
1 medium summer squash, cut into 1-inch slices
½ medium bell pepper, sliced
1/2 medium onion, cut into wedges
½ cup mushrooms, quartered
6 garlic cloves, peeled and chopped
2 tablespoons dried oregano
2 teaspoons dried parsley flakes
1 teaspoon paprika
Salt and pepper to taste.

INSTRUCTIONS
  1. Mix together the vegetables, oil, and seasonings.
  2. Tear 4 foil sheets (10 x 10 inch or larger).
  3. Lay two sheets out in an X. Place half the prepared vegetables in the center of the foil, slice sausages into 1-inch lengths, and place on top. Repeat with the remaining foil sheets to form two packets.
  4. Season each packet with salt and pepper to taste, bring foil up to center and fold over several times, sealing tightly; fold ends and seal.
  5. Preheat the grill to 350 degrees, place packets on the grill and cook for 10 minutes, turn over and cook for an additional 10 minutes.

Chef’s Tips

  • Add in a couple of sprigs of fresh rosemary and thyme for additional flavor and aromatics.
  • Removing the sausage casings is optional – the casings are edible and vegan-friendly – we recommended removing them so you can get a better char on the sausage when it’s grilled.
